Going to Wapo is like going to a luxury Spa. 13 different kind of woods, all natural, will wrap you at the entrance. Oak, mulberry, cherry, peach, fig, mandarine. The ceiling reminds the waves of the sea and everything seems to be build for your spiritual wellness.
Immediately you will want to speak low to not break the atmosphere and find the relax room to have a little 30 mins nap, but the smell stops us (or maybe the fact there are no bathrobes). Here it’s not a joke!
Chef Giovanni Gentile is pure creativity and experience, and his manu offer is super innovative. Unique and very tasty recipes, gluten free and never boring.
Before going deep in the menu, we need to talk about something: the steamed pizza by Wapo.
No, we are not joking. It’s the most creative experience we ever had with pizza. Served in a steaming bamboo box, with new ingredients and we cannot even describe it.
Let move foreword.
As a starter – always in a SPA mood – they have “prawns in a citrus fruit sauna”: red Mediterranean shellfish, steamed with lemon, served with fresh wasabi mayo.
Tris of artichokes cooked in three different ways and for sure (if you are very hungry) a beef tartare, with pochette eggs and black truffle; pepper and salt a la carte.
In between our favorite dishes of pasta there are “tagliatelle purple”: gluten free fresh pasta with aubergine pulp, black olives, capers and croutons.
“Katsuobushi dance” which is not a new dance, but gnocchi made with ricotta, with tuna belly and katsuobushi and “Napoli-Pechino, return”: transparent rice ravioli, “‘mbuttunati” (aka stuffed) from Neapolitan tradition, steamed and flamed with blowpipe.
Also “Wapo’llo” deserves our attention: chicken with pulled pork stuffed with peppers and pancetta, with steamed wild broccoli; or “Bianca & Verdi” with reworked mozzarella with green peppers on a San Marzano tomatoes mayo and confit tomatoes with olives crumble.
If you love fish, then steamed calamaro, fallen on his black, with potatoes brunoise and ‘nduja tears for everyone!
To finish, “Cioccolato Blues”, soft fondant with stracciatella of ricotta di bufala.
Now, if there was a relax area for real, then we would go to sleep until the following morning.
