Once upon a time,
on a terrace at the edge of the cliff, a magic place where princes and pricesses used to go for dinner. But not just a random dinner. A starred dinner. And the stars are not just in the dishes. Tonight the sky is full of them. Looks like a dream. A perfect night in such a perfect place. Is that possible? Yes, it is… and tonight is our turn. Finally it’s our turn, so, my dear Cinderella without a shoe and my dear charming prince with highlights… move out of our way!
Should we start from their salt, from the Dead Sea to Italy and Himalaya… or from their different breadsticks made with different risings which you can dip – as only princesses can do – in a finest oil which you have never tasted before? We want them all. Ok, the menu has arrived.
Careful, from now on Chef Luigi Tramontano, together with the great sommelier Nicoletta Gargiulo will be responsible og the extreme taste experience your mouth is going to live. What you are going to eat are not simple dishes, but art works in a plate.
Choice n1: “Looking at the Sea”: smoked yellowtale with cinnamon salty brioche sponge, yogurt salsa and dill. Tagliolini with seaweed and taratufi, sea urchins, confit tomatoes and chives. Stuffed totanetto with ragu sauce and potatoes on a beans cream and radishes. Following: totanetti crêpes, with lemon, anise and Swiss chard. At the pebbled sea front with coconut mousse with pistachio sponge, sand made of hazelnut crumble and blue sea with Curaçao infusion.
Choice n2: “Looking at the mountains”: Spring’s scents and colors. Cappelli with confit rabbit and orange, asparagus, Parmesan cream, salse scented with Eastern spices. Nutmeg veal shank ingot, prawns and carrot foam. Lemon inno with warm cake, basil cream, lemon semifreddo and sorbet with raspberry sauce.
