Their dough is special. Thin and super soft.
Fried pizzas, or baked at 3 temperatures such as “suino grigio ardesia” with ragu of lightbulbs tomatoes, golden onion from Montoro, slate gray guanciale cooked 12 hours, smooth crusted heel-bone; or curly endive, stracciatella from Corato, ginger cream and butter from Normandia, squid and lemon zest.
Ah! Don’t you dare starting without their frittatina of pasta from Gragnano “Pastificio dei Campi” aka: bechamel made of milk from Appennnino Campano, Parmigiano Reggiano of white cow from Modena 30 months, provola, artisanal ham of black pork from Caserta.
Their “Margherita” with fiordilatte and san Marzano tomatoes needs a standing ovation. To be tried also their “Pizza Misticanza” with mozzarella di bufala campana DOP, salad with fresh mint, veal from Appennino toscano and evo oil. “Bufala” with mozzarella di bufala campana DOP, San Marzano tomatoes DOP and evo oil Koinè.
