This is the first fast seafood history case where human being in a kitchen do nothing, or near to nothing. Everything is up to the sea and its treasures (they should write this otherwise all the compliments go always to the chef).

You will have the sensation to be just in the middle of the sea. The walls are blu, themed mise en place, and a specific attention to the fish. The tasting are from the Atlantic or Mediterranean. Carpaccio, Tartare and very soft buns served with the best of the best of the best of the best the sea has to offer, with a perfect mix of sides and seasonings which would NEVER cover the taste of the fish, but they always enhance it at every bite!
An example? Bun with salted cod in low temperature cooking, pan fried endive, black olives and capers mayo.
